Job Description
Supervise and coordinate all work done by offender workers:
Initiate daily planning with offender workers to clarify roles in food production and cleaning assignments.
Inspect all foods prepared to verify quality, quantity, and proper portion control, correct serving temperature and ensure food preparation is completed efficiently and on time.
Ensure all offender workers are aware of the proper operating procedures of power and manual equipment used in routine food preparation assignments.
Ensure that all work areas are adequately staffed at peak work periods by rotating offender workers.
Control and count tools, serving tools, food and cleaning supplies during food preparation and clean up time.
All contraband items (food, tools, and chemicals) will be signed out to the offender worker who is using it and signed back in when finished.
A complete pat search will be done on offender workers each time they leave the dietary area.
Coats, sweaters, and other outer garments will also be searched.
Order proper amounts of food and cleaning supplies from the storeroom and commercial vendors when needed on specified days.
Assist preparing meals and clean up under emergency conditions:
Ensure that specific cleaning and sanitizing items are on hand for sanitation needs.
Ensure that specific amounts of food stuff be on hand according to the recipes so that meals can be prepared for offenders, staff, and guests.
Follow all written and verbal instructions from supervisor or designee.
Menu and recipe will ensure the proper amount of food stuff have been issued for food preparation.
Ensure that all supplies received are accounted for and are stored in the proper places.
Temperatures of the freezers and refrigerators will be taken three (3) times a day and logged on charts for each freezer and refrigerator.
Clean and sanitize kitchen equipment, utensils, floors, walls, counters, tables and food carts in order to comply with the State Health Department's standards and to prevent food born illness:
Adhere to all policy and procedures of sanitation guidelines.
Delegate cleaning assignments to offender workers and assure safety precautions are used concerning manual and power equipment.
Enforce policies and procedures on personal hygiene of offender workers as well as self.
Make sure are responsibility is clean and sanitized before leaving.
Maintain personal characteristics needed to accomplish job objectives:
Maintain satisfactory appearance at all times.
Maintain a good working professional environment.
Maintain a cooperative attitude.
Be able to work under pressure and maintain a positive role model for offender workers as well as other staff.
Be conscientious in use of sick and leave time, arrive to work on time.
Keep informed of all dietary communications postings in order to comply with department policies and procedures:
Read and initial all written communications.
Communicate in a professional manner and repost any problems/concerns on misunderstandings about the job to supervisor when they occur.
Inquire and confer with the supervisor concerning menu modifications, changes and substitutions.
Minimum Qualification Requirements
Applicants must meet at least one of the following minimum requirements to qualify for positions in this job classification:
Two years of full-time work experience in mass food production in a commercial, military, hospital, or institutional food services setting.
A total of two years of education and/or full-time experience (as described in number one), where thirty semester hours of accredited college or university coursework in dietetics, nutrition, food management or a closely related equals one year of full-time experience.
Current, continuous experience in the state executive branch that includes one year of full-time work as a Cook 1, Cook 2, or Baker.

Additional Qualification Requirements
Within a period of time after hire, as determined by the appointing authority, employees in this class may be required to obtain a Commercial Driver’s License (CDL) and endorsements.
